This past Saturday at the London Convention Center, put on a great culinary charity  event like London has never seen, for Bethany's Hope Foundation.  http://www.bethanyshope.org/7chefs/7Chefs.html. I had the opportunity to deliver Chefs Hats  for the function ,courtesy of Claude Buzon owner of   http://www.chefs-hat.com/ and  got a chance to take a few photos also of the Chefs and Fanshawe Culinary students prepping for the function.
The images where shot in Raw format and re-sized in Photoshop with no other editing. I will edit as time permits.Hope you enjoy

One of the best parts of being involved with  the Feastival of Fine Chefs annual function in Edmonton is, as a comity member to participate in the Auctioned Dinner at Characters. Blair Lebsack formally of Madison's Grill and now NAIT's poster boy, myself  almost formerly of Edmonton ( more to come about that )and Shon Oborawsky  http://characters.ca/chef/  , have just cooked up an awesome supper for 12 . I had a blast ,must say to be in same kitchen with Blair is God send.......An absolute great day enjoyed by all. Huge THANKS to all the participants . Cheers

Its happened again the Edmonton Culinary High School challenge at NAIT this past Saturday consisted of 13 High Schools with teams of 3 students from Edmonton and surroundings. Here are a bunch of photos  from this very successful event. Great to see a lot of the Chefs from Edmonton and even Calgary and Red Deer participating as judges . Great job by Chef Simon Smotkowicz and  Chef Stanley Townsend from NAIT.

HDR stands for High Dynamic Range imaging and being a chef I can only compare it to Molecular cooking . For the most past you need to capture the same photo on three different exposures , one being correct ,one being under and the other being over exposed and the rest is simple ,bring them together on an HDR program such as Photomatix, and voila , all the tones are there ,the highs the lows and everything else , no more over exposed or under exposed photos , just a little work on your PC..........its a learning process at this point .

Being Jessica's birthday we decided to make her a chocolate cake instead of the more traditional Sweet potato and pecan pie
This was a traditional sort of Devils Food cake with chocolate mousse and finished with  hazel flavoured ganache . Needles to say it was yummy
